Browning the shells and heads most people throw away, then boiling the extraction down until it stops being a stock and becomes an ingredient
Shells, heads and the paste inside the head, browned hard in fat, deglazed, extracted into water and reduced until dense enough to season a dish with. It is the defining move of the bisque family and the reason a bisque tastes of shellfish in a way that a soup with shellfish in it never does.
